Yellow Pepper Dip with a twist

When it comes to dips, we often find ourselves reaching for the same old classics. Introducing our what I am calling a Yellow Pepper Dip. It is uniquely crafted with the goodness of yellow cauliflower, a golden beet, an orange pepper, and a medley of aromatic ingredients.

The Colors of Health: Color Means Nutritional

Before we delve into the recipe, let’s take a moment to appreciate the spectrum of vibrant colors in our ingredients. The yellow cauliflower, golden beet, and orange pepper are not just visually appealing; they’re also packed with essential nutrients:

  1. Yellow Cauliflower: A cousin to the more common white cauliflower, the yellow variety brings a rich dose of antioxidants, including beta-carotene and vitamin C, which support immunity and skin health.
  2. Golden Beet: The sunny hue of golden beets comes from betalains, potent antioxidants that help reduce inflammation and support detoxification.
  3. Orange Pepper: Bursting with vitamin A and C, orange peppers promote healthy vision, skin, and immune function.

Our Healthy Yellow Dip is more than just a dip. It plays with colors, combines for interesting flavors, and packs a lot of nutrition. The combination of yellow cauliflower, golden beet, orange pepper, and aromatics make for a very tasty dip. I didn’t so much plan this recipe, as much as I picked out produce that looked goo. So gather ingredients that appeal to you next time you are in the vegetable department of your grocery store and see what you can come up with.

The texture of this dip was very much like a hummus. It is finished off with a drizzle of olive oil and some pomegranate molasses. As you can see, I served it with some of the yellow cauliflower I reserved, celery and carrots.

Yellow Pepper Dip

My creative Yellow Pepper Dip was the brainchild of picking out good looking produce at the store for this hummus like dip.

Ingredients

  • 1 Head Yellow cauliflower
  • 1 Whole Orange pepper
  • 1 Whole Shallot
  • 1/2 Whole Red onion
  • 2 Cloves Garlic
  • 1/2 – 3/4 Cup Greek fat free plain Yogurt
  • 1 Tbsp Hot Honey
  • 1 Tbsp Organic Blue agave
  • 1 Tbsp Maple Syrup
  • 1 Drizzle Olive oil
  • 1 Drizzle Pomegranate molasses
  • 1 to taste Salt
  • 1 to taste pepper

Instructions

  1. Bake the yellow cauliflower florets and golden beet cubes until they're tender. This will take about 15 minutes for all and 30 – 40 minutes for the beet. Let them cool slightly.

    In a food processor, combine the cauliflower, golden beet, orange bell pepper, minced garlic, chopped shallot, red onion, salt, pepper and fat-free yogurt. Blend the ingredients until smooth and creamy. If the mixture is too thick, you can add a splash of water or olive oil to achieve your desired consistency.

    Check the dip for its salt and pepper level – adjust accordingly. Give it a final whirl in the food processor to incorporate the flavors evenly.

    Transfer the dip to a serving bowl and garnish a drizzle of olive oil and the pomegranate molasses.

    Serve your Healthy Yellow Dip with an array of dippables including cauliflower, celery and carrots. Enjoy!
