Ingredients

Soup

  • 2 Tbsp olive oil divided
  • 1 large yellow onion diced
  • 4 cloves garlic minced
  • 1 Tbsp curry powder plus 1 tsp for the cauliflower
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 4 medium sweet potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • salt and pepper to taste

Roasted cauliflower topping

  • 1/2 head cauliflower cut into small florets

Instructions

  • Heat the oven to 425°F. Toss the cauliflower with 1 tablespoon of the oil, 1 teaspoon of curry powder and a pinch of salt. Roast 20–25 minutes, until browned.
  • Meanwhile, heat the remaining oil in a large pot over medium heat. Cook the onion 5 minutes, until soft. Add the garlic, curry powder, cumin and turmeric and cook 1 minute.
  • Add the sweet potatoes and broth. Bring to a boil, then simmer 20–25 minutes, until the sweet potatoes are very tender.
  • Blend until smooth with an immersion blender (or in batches in a blender).
  • Stir in the coconut milk and season with salt and pepper.
  • Serve topped with the roasted cauliflower. Enjoy!
