
Creating a significantly healthier ice cream by using coconut cream and coconut milk in lieu of heavy cream in my Boozy Dairy Free Ice Cream.
Begin by whipping the coconut cream until heavy peaks are formed.
At the same time, in a sauce pan, add the sugar to the coconut milk and cook until dissolved - 3 - 4 minutes. Let cool.
Next, pour the cooled mixture into the whipped cream with the rest of the ingredients. Gently fold everything together. Once mixed, pour into a glass loaf pan and place in the freezer.
When ready to serve, take out 15 minutes early. Enjoy!
