Tzatziki

This is one recipe my wife asks for me to make.  Besides being tasty, it is really good as a snack since I use Greek yogurt.  I have made this recipe before.  What I learned this time, I used a different brand of Greek yogurt and this one was a little runnier than the other brand.  The taste was still very good.

We actually used it in turkey wraps I made.  Really nice flavor and a variation on a turkey caesar wrap I guess.

Recipe
Tzatziki Sauce:

  1. 1st thing you need to do is to dice up a cucumber and mix with 1 tbsp of salt and place in a sieve to remove a lot of the moisture (let drain for at least 1 hour) – it is amazing how much moisture is taken out of the cucumber
  2. Add the drained cucumber to 2 cups of plain Greek  yogurt; mix in the juice from 1 fresh squeezed lemon, 4 tbsp olive oil, 2 tspn of prepared minced garlic, 1 1/2 tsp of chopped fresh dill, 1/2 tsp each of salt and pepper and mix well
  3. Refrigerate for a few hours (I let the flavors come together for more than 4 hours) mix and serve.
