Tuna Salad Sandwich

With all the cooking I am doing, I really need to eat more lite fare.  A basic tuna sandwich is a good start but it still has to be good.  I like adding red peppers to give it more crunch and a little bit of color.

Recipe
Tuna Salad Sandwich:

  1. For the tuna, I use 3 cans of white albacore in water;  rinse and drain well;  in a bowl, add 1/4 cup of lite mayonnaise, 2 tbsp sweet & spicy mustard and 1 tsp of lemon juice
  2. Next mix in 1 1/2 stalks of finely chopped celery, 2 slices of finely diced yellow onion and 1/4 of a red pepper diced
  3. Add 2 tsp each of celery salt and ground black pepper and 1 tsp salt
  4. To assemble the sandwich take 2 slices of Italian loaf bread, 1/2 piece of romaine lettuce and as much of the tuna salad as you like
