Tuesday’s Tip – secrets of Good Cole Slaw

Given that we are in the heart of the summer, I was thinking about a common problem and thought I would research it.  Now, I may not have saved the world but I did learn a very simple technique to make better cole slaw.  The key is salt.  The objective is to pull out some of the moisture before you add your dressing to the slaw.  If you are like me, I always assumed the result of having to much liquid came from my dressing.  After reading these insights below, I am convinced that the problem was the moisture in the cabbage.  I will let you know for sure this weekend, when I test it out myself.  Have any of you done this step to your cabbage when making slaw?
