Some recipes feel special not just because of their flavor, but because of the story behind them. My Tray-Bake Mediterranean Salmon is one of those recipes. I made it using authentic Jordanian olive oil and spices gifted to me from a client and friend —warm, fragrant blends that brought the dish to life with a true Middle Eastern flair.
Jump to RecipeThe salmon roasts alongside tender potatoes and is served with sweet roasted carrots over yogurt. The result? A vibrant, nourishing meal that feels restaurant-worthy yet comes together in one sheet pan.
The Power of Olive Oil & Spices
Good olive oil is at the heart of Mediterranean cooking, and using one straight from Jordan made this dish even more special. Paired with authentic Middle Eastern spices—think cumin, coriander, oregano, or thyme—the salmon takes on layers of depth that are earthy, citrusy, and aromatic.

These simple, wholesome ingredients prove that you don’t need a long list of fancy add-ins to create big flavor—just high-quality olive oil and a few bold spices. It really is interesting how spices from different regions of the world really do taste different.
Health Benefits of Salmon
Beyond the incredible flavor, salmon is a nutritional powerhouse:
- Rich in Omega-3s: Supports heart health and reduces inflammation.
- High in Protein: Keeps you full and fuels muscle health.
- Vitamin D & B Vitamins: Essential for bone health and energy.
Why Bake Instead of Pan-Fry?
While pan-frying can be quick, oven-baking salmon has major benefits:
- Uses less oil while still keeping the fish moist.
- Even heat ensures tender, flaky salmon every time.
- Less hands-on cooking—just pop it in the oven and let it roast.
It’s healthier, easier, and perfect for a stress-free dinner.
