Tray-Bake Mediterranean Salmon

My Tray-Bake Mediterranean Salmon has so much flavor, comes together so easily and is the perfect weeknight meal.

Ingredients

  • 24 – 30 Ounces Salmon
  • 1 Tbsp Oregano
  • 1 Tbsp Thyme
  • 2 Tsp Salt divided
  • 2 Tsp Ground black pepper divided
  • 1 Tbsp Olive oil divided
  • 2 Lbs Yellow potatoes

Instructions

  1. Begin by cutting the potatoes in half and brushing with half the oil. Lightly add salt and black pepper. Place on a baking tray on the outer rim and begin roasting at 375 degree.

    Brush the salmon with the olive oil and add the seasoning. After 15 – 18 minutes of the potatoes baking, add the salmon to the center of the baking tray and place back in the oven.

    Remove from the oven and serve with the vegetable of your choice. I served roasted carrots over yogurt. Enjoy!
