Tilapia Tacos

I used the Tilapia that was braised in Mexican spices for the fish.  I added some grilled corn salsa, some sriracha mayonnaise and a pretty decent version of Chipotles cilantro rice.  All the flavors worked so well together.

Recipe
Tilapia Fish Tacos:

Mexican marinated and spiced Tilapia (see post)

Chipotle Rice:
  1. I actually worked with white rice that I had already made – probably 3 cups full
  2. I put 2 tbsp olive oil in a pan over medium heat and added the rice
  3. Add 4 tbsp of lime juice throughout the cooking process
  4. Add 1/3 of a bunch of cilantro roughly diced
  5. Add 1 tbsp each ground cumin and ground coriander
  6. Add 1 additional tbsp of olive oil towards the end of the cooking process

Sriracha Mayonnaise:

  1. Mix 1/3 of a cup of mayonnaise and 1 tbsp of sriracha sauce (I probably used 2 tbsp)

Corn Salsa:

  1. Grill 2 ears of corn and cut from the cob
  2. Take 1 cup of hot salsa (yes I used a bottle) and add in the grilled corn and mix

Assemble the Fish Taco:

  1. Use a small corn tortilla, then take a few pieces of the Tilapia, add the corn salsa, then the sriracha mayo, a slice of red and green pepper and finish by adding as much of the cilantro rice as you wish – enjoy

    Very nice and informative blog posting. Among all the fish, tilapia fish is Awesome! Tilapia fish farming is very profitable and easy. I like this fish very much for it’s unique taste and nutritional value.
