Salad with Grilled Tomatoes & Onions in a Yogurt Ranch

I have noted recently that I want to expand my use of Greek Yogurt in certain dishes to make them healthier.  The easiest place to start is in salad dressings.  Taking advantage also of summer, I grilled tomatoes, corn and onions and added them to the salad.

Recipe
Salad with grilled Tomatoes, Corn & Onions with a Greek Yogurt Ranch dressing:

  1. For the lettuce, I chopped 1/2 of a head each of leaf and red leaf lettuce
  2. Next, I added 1/4 each of a diced red and yellow pepper followed by 2 carrots peeled and shredded
  3. Next, I added 1 grilled ear of corn removed from the stalk, 1/2 pint of grilled red and yellow cherry tomatoes and finished with  3 grilled rings of a vidalia onion
  4. The dressing included 1/4 cup of Greek Yogurt, 1/4 cup of olive oil, 1 fresh squeezed lemon, salt & pepper to taste

    This is so pretty! It looks delicious. I love the idea of using Greek yogurt to make it lighter.
