Rao’s Famous Lemon Chicken

I wanted to make something special for our friend Tom who is about to have some surgery.  Tom has been so generous to our family. So I wanted to find something his whole family would like and would also be good reheated.  So I decided on Rao’s Famous Lemon Chicken. The only problem, even though, I doubled the recipe, I did not save any for my family.  I will definitely have to try to make Rao’s Famous Lemon Chicken again soon.

Ingredients (adapted from Ina Garten):
2  – 2 1/2-to-3-pound broiling chickens, halved
Salt, pepper and oregano to taste

2 – bags of mini potatoes, 1 red, 1 gold
Lemon Sauce (make this while the 1st broil is going on)

3 cups fresh lemon juice
1 1/2 cup olive oil
1 1/2 tablespoon red wine vinegar
1 1/2 teaspoons minced garlic
1 teaspoon dried oregano
Salt and pepper to taste
Whisk together juice, oil, vinegar, garlic, oregano, and salt and pepper.  Set aside.

Directions
Pre-heat your broiler on a low broil.  Let the oven warm before you put the chicken in the oven.  Spice the chicken before putting into the oven.

Broil the chicken halves for about 30 minutes.

Slice 3/4 of the potatoes in half.

Place into the skillet.  Pour all of the lemon juice in to the skillet.  (I should point out that I put the second chicken in a broiling pan.)

Return to the broiler and broil for 15 minutes.
