This is a nice complement to a number of dishes. Â Since I used feta as the cheese, you want to make sure the main dish is not too strong. Â I paired this with salmon but pushed the envelope a little since I topped the salmon with a red pepper cream sauce (see previous post).
Recipe
Orzo with Feta and Asparagus:
Asparagus:
- Take about 10 stalks and add to a double boilerÂ
- Boil for 3 or so minutes and remove from stove
- Cut off tops for use in the orzo (save rest of stalks for a soup)
Orzo:
- Boil 2 quarts of water
- Add 1 cup of orzo
- Cook for 8 – 10 minutes until al dente
- Drain and return to pot
Final Assemblage:
- To the orzo, add 1/4 cup of crumbled feta
- Add back in asparagus tops
- Mix and return to stove for 2 minutes on low heat and serve
