Orange Soda Pound Cake

I picked up these Four Ten Calorie DSPG Products at a local Walmart Express store (The Dr. Pepper Snapple Group gives you a coupon to buy some Four Ten Calorie DSPG drinks at Walmart – so stop on in).  Grab this coupon at Walmart this coupon supplies last.  I got to sample the product and want to see if taking in less calories meant any less flavor.  In this case, I purchased the Orange Sunkist soda.  The flavor was quite good and I do not know if you would know that this was a reduced calorie soda.  But could I make up a recipe using the product?  Given the sweetness and the orange flavor, I thought this would be a good base for a cake.  I didn’t know how the soda would react with the flour and what the texture would be after baking.  Only one way to find out.  Try it!

As an aside, I thought I would share that this was my first time in a Walmart Express.  So I checked out the store and specifically the produce and meats.  I was pleasantly surprised with the variety and I assume quality I found in these products.  To check out more of these Four Ten Calorie DSPG Products peek at their FB page or their Twitter.

Back to the post.  I can’t remember ever having seen, let alone used soda in a cake before.  So I googled it to see if it was possible.  I did find people who had made such a cake and found various recipes to use as a guide.  I lost the one that I actually referenced so I can’t give credit.  Sorry.  I will say that this concept is definitely worth trying and you certainly would never know I used the 10 calorie Sunkist for this Orange Soda Pound Cake. The cake was very moist.

Using the soda certainly works.  The texture of the cake was incredibly moist.  What was interesting was the top of the cake got a little crusty.  Normally that would not be good.  But everyone was trying to eat the crumbs and pieces that flaked off.  Those pieces were probably the best part of the cake.  I also felt the orange flavor was very balanced.  The flavor came through.  So if you want to try a totally different way to make a cake, give this recipe a try.

Top down 500

 

60 degree 500

Ingredients:
  • 3 cups all-purpose flour
  • 2 3/4 cups sugar
  • 1 cup Sunkist orange drink 10 calorie soda
  • 1 cup Crisco
  • 1 stick melted butter
  • 5 eggs
  • 8 ounce chocolate orange almond bar
  • 1/4 cup Sunkist orange drink

Directions:
In your stand mixer, cream together the Crisco, sugar and butter.

Next, add the eggs, one at a time and incorporate.

Finish by alternately adding in the flour and orange drink – finishing with the flour.
Orange soda added 500
Spray your bundt pan very well and pour in the batter into the pan.  Bake at 325 degrees for 1 1/2 hours (I thought this seemed like a long time but it need close to all of it.  I wonder what the science is of the soda on the baking time required?). Let cool before you take out of the bundt can.  I took the cake out a piece at a time.  For the sauce, I put the chocolate bar and the orange soda in a bowl
Sauce 500
and set it atop a pot of boiling water until melted and stirring most of the time.  The soda makes this more of a sauce than using milk where you would make a ganache or glaze.  So I served it on the side and dipped the cake in the sauces.  It was a great way to use this combination to enhance the orange flavor.
