Mexican Braised Tilapia

We were having fish tacos and I utilized a braising cooking method instead of grilling.  The tilapia was super moist and flavorful.

Recipe
Mexican Braised Tilapia:

  1. Create a marinate by combining 1/2 cup of canola oil, 1/4 cup of tequilla, 4 tbsp of lime juice and add 1 tbsp each oregano and basil, salt and pepper to taste, mix well
  2. Add 5 tilapia fillets (a little more than 1 lb), a few fresh sprigs of cilantro and 1/4 each of a sliced red onion and green and red bell peppers and refridgerate for 2 hours
  3. Turn heat to high under your skillet and pour in the marinate and vegetables reserving the tilapia fillets until the liquid is hot
  4. Turn heat down to medium and place fillets in the heated marinate – cook for 6 or 7 minutes, turning a couple of times.
