Marry Me Salmon Meatballs
My Marry Me Salmon Meatballs is an awesome spin on the viral classic that might just leave you not so full for more fun after dinner.
Ingredients
- 2 Lbs Ground salmon mine was from Sitka Salmon Shares
- 1 – 2 Tbsp Olive oil
- 2 Tsp Oregano divided
- 2 Tsp Garlic powder divided
- 2 Tsp Onion powder divided
- 1 Tsp Thyme
- 1 Tsp Ground basil
- 1/2 – 1 Tsp Red pepper flakes
- 1/2 Tsp Salt
- 1/2 Tsp Ground black pepper
- 1/2 Cup Chicken stock
- 1 14.5 Oz Coconut milk
- 1/3 Cup Sun-dried tomatoes and liquid
- 5 Whole Garlic cloves minced
- 1/2 Cup Shredded parmesan
- 1 Bag Fresh spinach
- 2 Ounces Fresh basil torn
Instructions

Begin by adding the frist 4 spices to the salmon and form the meatballs. Bake in a 350 degree oven for 12 – 15 minutes.
Meanwhile, heat the oil in a skillet on medium high heat. Add the sun-dried tomatoes and remaining spices and cook for 2 – 3 minutes. Next, add in the chicken stock, mix well and simmer for 3 – 4 minutes. Now, add in the coconut milk, stir, and simmer for 2 – 3 minutes.
Reduce heat to a modest simmer. Add in the spinach and basil and simmer until it wilts. Finish by adding in the salmon meatballs and simmer for 4 – 5 minutes.
Serve by taking 2 – 3 meatballs and pouring in the sauce in a bowl. Enjoy!
