Some recipes go viral because they’re just that good—and “Marry Me Chicken” is one of them. Creamy, savory, and a little indulgent, it earned its romantic name because the flavors are said to be so irresistible, they could inspire a marriage proposal. Fun, right?

I wanted to take that same concept and give it a lighter, more playful twist: Marry Me Salmon Meatballs. Tender, flavorful salmon meatballs are simmered in a creamy, sun-dried tomato sauce that’s every bit as comforting as the original, but with a fresh and healthy spin.

The Origin of “Marry Me” Recipes

The viral Marry Me Chicken recipe first started popping up in food media around the mid-2010s, but it really took off thanks to social media. The dish is essentially chicken simmered in a creamy sauce with garlic, parmesan, sun-dried tomatoes, and herbs. The name “marry me” was coined because the flavors were so crave-worthy, people joked they were proposal-worthy. Marry Me Salmon Meatballs

My Marry Me Salmon Meatballs is an awesome spin on the viral classic that might just leave you not so full for more fun after dinner.

Ingredients

  • 2 Lbs Ground salmon mine was from Sitka Salmon Shares
  • 1 – 2 Tbsp Olive oil
  • 2 Tsp Oregano divided
  • 2 Tsp Garlic powder divided
  • 2 Tsp Onion powder divided
  • 1 Tsp Thyme
  • 1 Tsp Ground basil
  • 1/2 – 1 Tsp Red pepper flakes
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground black pepper
  • 1/2 Cup Chicken stock
  • 1 14.5 Oz Coconut milk
  • 1/3 Cup Sun-dried tomatoes and liquid
  • 5 Whole Garlic cloves minced
  • 1/2 Cup Shredded parmesan
  • 1 Bag Fresh spinach
  • 2 Ounces Fresh basil torn

Instructions

  1. Begin by adding the frist 4 spices to the salmon and form the meatballs. Bake in a 350 degree oven for 12 – 15 minutes.

    Meanwhile, heat the oil in a skillet on medium high heat. Add the sun-dried tomatoes and remaining spices and cook for 2 – 3 minutes. Next, add in the chicken stock, mix well and simmer for 3 – 4 minutes. Now, add in the coconut milk, stir, and simmer for 2 – 3 minutes.

    Reduce heat to a modest simmer. Add in the spinach and basil and simmer until it wilts. Finish by adding in the salmon meatballs and simmer for 4 – 5 minutes.

    Serve by taking 2 – 3 meatballs and pouring in the sauce in a bowl. Enjoy!
