Italian Meatballs

What do you call 30 hungry boys, water and high school students?  The boys swim team.  Swim season has begun.  The pleasure of being a parent is that we get to feed this tornado.  They come into your house (they are very polite) and they inhale whatever food we offer.

That did not stop me from wanting to create a tasty meal.  I shopped at the Restaurant Depot.  This place is Costco on a mild case of steroids.  I bought 40 lb of ground meat, 10 lbs of pasta, 60 sub rolls and 3 lbs of cheese.  You get the idea.

 

Recipe
Italian Meatballs:
Ingredients:

  • 40 lbs of Ground Beef
  • 1 quart of whole milk
  • 1 can of Italian Bread Crumbs
  • 8 eggs
  • 1/2 cup of Italian Seasonings
  • 2 – 32 oz cans of Marinara Sauce
  • 2 – 32 oz cans of Italian Diced Tomatoes 
  • 1 – 5 oz can of Tomato Paste
  • 1/4 cup of sugar
  • 1 head of garlic
  • 2 tbsp each salt and pepper

Directions:
Mix all ingredients with 1/4 cup of the Italian seasonings and roll into balls (I made this in 2 batches).  Place into big tinfoil pans and bake in a 325 degree oven for 20 minutes.  Meanwhile, in a large pot add the Marinara sauce, diced tomatoes, tomato paste, sugar and the head of garlic roasted, bring to a boil and let simmer for a couple of hours.

Drain the liquid/fat from the meatball tray and then add the meatballs to the marinara sauce and let simmer for an hour.  Serve and be sure to include a good amount of the sauce.
