Homemade Red Raspberry Breakfast Bars

I am at the point where you begin to say to yourself, when you see something in the store, that “I can do that.”  It is fun.  It must be cheaper than buying it and you can make your own little twists.

Recipe
Red Raspberry Breakfast Bars:

Ingredients:

  • 3 cups of all purpose flour
  • 3 cups of uncooked quick oats
  • 1 &1/2 cups of sugar
  • 1 cup of brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2/3 cup butter
  • 1 jar (8 oz) of red rasberry jelly
Method:: 
  1. Combine the flour, oats, brown sugar, sugar, baking soda, salt and cinnamon in a mid-size mixing bowl
  2. Add butter and stir with a fork until fully mixed
  3. Set aside 2 cups of the crumb mixture
  4. Place in a 9″ x 13″ baking dish sprayed with Nonstick cooking spray
  5. Place the mixture in the pan pressing down to create an even layer
  6. Place in a 350 degree and bake for 7 – 8 minutes
  7. Remove from oven and cover with the jar of jelly and then the reserved bread crumb  mixture
  8. Return to the oven and cook for another 25 – 30 minutes
  9. Let cool completely before cutting and serving

    That happened to me a lot. I don’t know how many times I tried to duplicate some goodies from the stores (I’m addicted to Starbucks’ cranberry bliss bars, but always regret baking them, because I ended up eating like 10 of them myself!).
