High Protein Sweet Potato Sausage & Spinach Soup
My High Protein Sweet Potato Sausage & Spinach Soup is a light but such a hearty dish that is loaded with protien.
Ingredients
- 6 Whole Sweet Potatoes
- 1 Whole Red onion peeled and halved
- 1/2 Head Garlic
- 1 Tbsp Cumin
- 2 Tsp Smoked Paprika
- 2 – 3 Tbsp Maple syrup
- 1 Tsp Fennel
- 1 Tsp Salt
- 1 Tsp Ground black pepper
- 1 Lb Ground turkey
- 1 Bag Spinach
Instructions

Begin by placing the sweet potatoes, onion and garlic on a baking tray. Put in a 400 degree oven and bake for 40 minutes.
Meanwhile, heat a skillet on medium high heat. Add the ground turkey and add the fennel, salt and pepper. Cook until just browned. Remove from the skillet and darin on a paper towel.
Take the sweet potatoes, onion and garlic out of the oven. Once cool enough to handle, peel the skin from the sweet potatoes. Add to a blender with the cumin, smoked paprika and maple syrup. Blend until smooth.
To finish, add the blended soup to a pot on medium heat. Add the sausage in followed by the spinach. Check for seasoning.
Serve and enjoy!
