High Protein Sweet Potato Sausage & Spinach Soup

Ingredients

  • 6 Whole Sweet Potatoes
  • 1 Whole Red onion peeled and halved
  • 1/2 Head Garlic
  • 1 Tbsp Cumin
  • 2 Tsp Smoked Paprika
  • 2 - 3 Tbsp Maple syrup
  • 1 Tsp Fennel
  • 1 Tsp Salt
  • 1 Tsp Ground black pepper
  • 1 Lb Ground turkey
  • 1 Bag Spinach

Instructions

  1. Begin by placing the sweet potatoes, onion and garlic on a baking tray. Put in a 400 degree oven and bake for 40 minutes.

    Meanwhile, heat a skillet on medium high heat. Add the ground turkey and add the fennel, salt and pepper. Cook until just browned. Remove from the skillet and darin on a paper towel.

    Take the sweet potatoes, onion and garlic out of the oven. Once cool enough to handle, peel the skin from the sweet potatoes. Add to a blender with the cumin, smoked paprika and maple syrup. Blend until smooth.

    To finish, add the blended soup to a pot on medium heat. Add the sausage in followed by the spinach. Check for seasoning.

    Serve and enjoy!
