Healthy and Tasty Zucchini Corn Fritters

My healthy and tasty zucchini corn fritters are packed with flavor, have great texture, are fun to eat and perfect for entertaining.

Ingredients

  • 1 Large Zucchini shredded
  • 2 ears Corn
  • 3 Whole Chives chopped
  • 2 Whole Eggs beaten
  • 2 Whole Green onions diced
  • 1/4 – 1/2 Cup Gluten-free Italian bread crumbs
  • 1/4 Cup Gluten-free all purpose flour
  • 2 Tsp Baking powder
  • 1 Tsp Ground black pepper
  • 1 Clove Garlic minced
  • 1/4 Cup Parmesan grated
  • 3 Tbsp Neutral oil

Instructions

  1. Begin cooking the corn in the microwave for 3 and 1/2 minutes. At the same time, shred the zucchini. Once shredded, take the zucchini wrapped in a dish towel and squeeze out all the water that you can.

    In a mixing bowl, add the rest of the ingredients. Form them into pancake size fritters. Now heat a skillet on medium high heat. Add the oil and warm until shimmering. Once heated, add in the fritters and cook for 3 – 4 minutes per side. Remove to a paper towel to soak up the excess oil.

    Serve with an herb aioli and enjoy!
