Hanukkah Coins Cookie

I may be a little late in terms of publishing posts that help others for the holiday but there is still time.  This is a cookie recipe that you make the dough into a log, let it set in the fridge and then slice it when you are ready to bake it.  The cookies are also topped with a buttercream frosting.  I thought this type of frosting was only reserved for cakes.

I would say the frosting is a good touch because the cookie is light.  I think if I tried this recipe again I would do more of a glaze for a topping.  So feel free to try either.

Recipe
Hanukkah Coin Cookies (adapted from The Great American Cookie Book):
Cookie Ingredients:

  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup Hershey’s cocoa
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
Directions:
Beat butter, sugar, egg and vanilla in mixing bowl until well combined.  In a separate bowl, mix together flour, cocoa, baking powder and salt.  Gradually add to the butter mixture.  Divide the dough in two, roll into two 7 inch logs and place on parchment paper.  Wrap in plastic wrap and place in the fridge for at least 8 hours.
 
Buttercream Frosting:
Ingredients:
  • 1/2 stick of butter, softened
  • 1 1/2 cups of confectioners sugar
  •  2 tbsp milk
  • 1/2 tsp vanilla extract
  • Yellow food coloring
Directions:
Beat butter until creamy.  Gradually add the sugar and mil to the butter, beating until creamy.  Stir in yellow food coloring.
 
Finish by baking the cookies for 8 – 10 minutes in a 325 degree oven.  Let completely cool.  Then frost.  Enjoy.
