Grilled Salmon with Lemon Aioli

Developing ways to please all eaters of a particular meal is sometimes a challenge.  This night, I was cooking for my wife and me.  AJ will only want the salmon grilled, no sauce.  I would like to add a little punch to it.  So I bought separate pieces of salmon enabling me to add a step to my piece and still provide AJ exactly what she wanted.

   Recipe
Lemon Aioli:

  1. In a bowl, combine 1 tsp zest of a lemon with juice from half the lemon, with 1 chipotle pepper in adobo sauce, 1/3 cup of mayonnaise and 1 egg yolk – mix well

Salmon:

  1. Heat skillet while preparing aioli on medium high
  2. Sear flesh side for 2 – 3 minutes
  3. Flip to skin side down and put in a 350 degree oven for 6 – 7 minutes
  4. Remove from oven and apply aioli generously to top of salmon and now finish salmon off by setting oven to high broil and broil for 1 – 2 minutes (keep your eye on the aioli so you get a little crust/carmelization)
