Grilled Corn & Tomato Quinoa

I made a side of Quinoa to go with the blackened salmon sandwiches for our night at Ravinia.  I had a number of vegetables already cut so this was kind of a catch all Quinoa.  I grilled 2 ears of corn, halved a dozen medley tomatoes, and added red and green peppers, a bunch of chopped green onions and a few pieces of diced squash and zucchini.

Recipe
Grilled Corn & Tomato Quinoa:

  1. Boil 2 cups of water and add 1 cup of Quinoa and reduce to a simmer
  2. When the water has evaporated, add 2 tbsp of tomato paste, mix well
  3. Add in the Grilled corn, green onions, peppers, squash and zucchini and cook for 2 – 3 minutes
  4. Add in tomatoes and cook for 2 more minutes.
