GF Turkey Shepherds Pie

The inspiration for this GF Turkey Shepherds Pie is both a love of comfort food and taking advantage of leftovers, or at least, extra potatoes.  I had bought a big bag of potatoes and wanted to use them before they went bad.  As an aside, how come they make the bag of potatoes so big.  Don’t you always end up wasting potatoes from the bag.

GF Turkey Shepherds Pie from Feed Your Soul Too

Potatoes are so versatile.  I have used them in so many different ways including these LAYERED MASHED POTATOES, a TWO LAYERED POTATO with sweet and russet potatoes, and these SPICY POTATOES showing you a few varied examples.  Potatoes are not the only ingredient in this dish.  This dish gains its flavor by adding flavor to every layer.  The turkey is spiced with seasoned salt and oregano.  There are plenty of vegetables including onions for sweetness and green and red peppers for spice and texture.  I also added peas and corn for more texture and also color.

The final layer is creamy potatoes and melted cheddar cheese.  That top layer is pure comfort food.  Now I may have learned to make some more sophisticated recipes but ultimately, I like to make food that warms your heart.  Cooking is about making those things you like.  This GF Turkey Shepherds Pie is a perfect example of my style.  The recipe is total comfort food but my growth as a chef adds to the depth of this recipe.  That means I get to be warmed by this dish but I added flair and flavor.

GF Turkey Shepherds Pie

Taking advantage of leftover mashed potatoes to make this super homey, super hearty, super comfort food GF Turkey Shepherds Pie.

Ingredients

Ground Turkey

  • 3 Lba Ground Turkey
  • 2 Tbsp Seasoned Salt
  • 1 Tbsp Cumin
  • 1 Tbsp Oregano
  • 1 Tbsp Salt
  • 1 Tbsp Almond Flour

Veggies

  • 2 Tbsp Olive Oil
  • 1 Whole Medium Yellow Onion diced
  • 1/4 Whole Red Pepper diced
  • 1/4 Whole Green Pepper diced
  • 3 Cloves Garlic minced
  • 6 Ounces Frozen Corn
  • 6 Ounces Frozen Peas
  • 2 Tsp Cumin
  • 2 Tsp Salt
  • 2 Tsp Black Pepper
  • 3 Sticks Carrots diced

Potatoes and Cheese

  • 3 Cups Leftover Mashed Potatoes
  • 1 Cup Cheddar Cheese shredded

Instructions

Ground Turkey

  1. Begin by heating a skillet on high heat.   Add the turkey and spices and cook until browned breaking up as you go.  Add in the flour and mix well.  Remove from pan, drain (if any liquid remains) and set aside.


Sauteing Veggies

  1. Heat the oil in the same skillet.  Once warm, add the onions and cook for a couple of minutes until softening.  Add in the peppers and cook for another minute.  Finish by adding in the garlic and cook for one more minute.  Remove from heat.

Final Preparation

  1. Taking a baking dish, begin by putting the ground turkey on the base.  Next, top with the sauteed veggies.  Next, add the mashed potatoes.  Finish by topping with the cheddar cheese.  Place in a 325 degree oven and bake for 30 minutes.

    Serve and enjoy!
