Faux Monterrey Jack Cheese with Banana Rings

I so loved the faux velveeta cheese I made last week, I wanted to try it again using a different cheese this time.  I had Monterrey Jack in the fridge.  How about complementing the cheese with a little bit of spice!  An idea was born – add in banana rings.  This was truly a good idea.

 

 

What I did learn was that this cheese really does take on the melting properties of Velveeta so it is not sturdy enough for sandwiches when melted.  It is perfect for mixing on pasta or the like.
