Caprese Salad

I had a lot of basil to use and I believe a Caprese Salad is both really enjoyable and also looks really pretty when you mix in different color tomatoes.  As I grow in my cooking, the visual appeal of the food has grown equally.  Using red and yellow tomatoes offers a very appealing presentation for this traditional side dish.

Though the recipe is very simple, it is important to use high quality, fresh ingredients.

Recipe
Caprese Salad:

  1. Slice reasonably thin 4 slices each of red and yellow tomatoes
  2. Slice 4 pieces of fresh mozzarella and cut in half
  3. Grab an equal number of basil leaves and cut each leave in half
  4. Assemble by using a tomato slice as the base, top first with a piece of mozzarella and then top with a basil leave;  finish by drizzling with olive oil.
