Best Mushroom Beet Burger

My delicious Best Mushroom Beet Burger is packed with flavor and might just make you forget that there is no beef!

Ingredients

  • 1 Whole Beet rough chop
  • 1/2 Pint Mushrooms
  • 1 Ear Corn
  • 1/2 Whole Green bell pepper
  • 1/4 Whole Red onion
  • 1 Cup Black beans
  • 2 Cloves Garlic
  • 1 Cup Oat flour
  • 1/4 – 1/2 Cup GF breadcrumbs
  • 1 Tbsp Ground cumin
  • 1 Tbsp Smoked paprika
  • 1 Tsp Salt
  • 2 Tsp Ground black pepper
  • 3 Tbsp Olive oil

Instructions

  1. Preheat the oven to 400 degrees F.

    Lightly grease a baking sheet and set aside. Use a sharp knife to cut the beets and onion into quarters. Cook until the beets are tender (stick a knife in to check).

    Add all ingredients to a food processor. Transfer the mixture to a mixing bowl and add the, breadcrumbs, paprika, cumin, salt, and black pepper. Mix well with a spatula. Roll the mixture into 8 patties about ½-inch thick and place them on the baking sheet. Bake for 15 minutes, flip. Once firm, finish the cooking by heating oil in a skillet. Cook on each side for 3 – 4 minutes.

    Serve the with your favorite toppings of choice. Enjoy!
