Put all the ingredients in a blender save for the oiive oil and mayo Turn on the blender and drizzle in the olive oil. Blend until combined. Finish by adding and mixing in the mayonnaise. Set aside.
Begin by forming your burger patties and season with salt and pepper. Heat the cast iron skillet on medium high heat. Add the burgers and cook 4 - 5 minutes per side. After flipping the burger, 2 minutes into the second side, top with the fresh mozzarella. Cover with a lid to enahnce the melt. Remove from pan and let rest ofr a minute.
Meanwhile, bake the buns for 1 - 2 minutes at 325 degrees. To assemble, take the bun and lather with the pesto aioli. Next, add the burger followed by the tomato.
