Tilapia Fish Tacos

Ingredients

  • 3 Tialpia Fillets
  • 4 tablespoons Olive Oil divided
  • 1 tablespoon Adobo seasoning
  • 2 teaspoons Mexican Chili Powder
  • 2 teaspoons Cumin
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon Chili Powder
  • 1 teaspoon oregano
  • 1 teaspoon dried cilantro
  • 6 tortillas
  • 2 avocados
  • 1 teaspoon Tobasco
  • 1/4 cup mayonnaise
  • 1 tablespoon srirach
  • 1/4 head of red cabbage sliced
  • 1 whole tomato diced
  • 1/2 red onion diced
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

Instructions

  1. Combine all the ingredients (using 3 tablespoons of the oil) up to the tortillas and form into a paste.
  2. Rub the paste on to the tilapia and set in the fridge for an hour.
  3. Meanwhile, combine the mayonnaise and sriracha and set aside.
  4. Also, scoop out the avocado and mash and add the tobasco. Leave a little chunky. Set aside.
  5. Take the red onion and soak in the combined red wine vinegar, sugar and salt mixture for an hour.
  6. Heat a skillet on medium high heat and add the remaining tablespoon of oil. Add the tilapia fillets and cook 2 - 3 minutes per side.
  7. Assemble the fish tacos by starting with a tortilla; now layer with the creamy avocado, tilapia, cabbage, pickled red onions, tomato and finish with the sriracha mayo.
  8. Serve and enjoy!
