Sweet Potato Poutine

Alexia fries topped with cheese curds, slow cooked beef and gravy.

Ingredients

  • 1 1/2 pounds ground chuck steak
  • 1 tablespoon canola oil
  • 4 stalks celery
  • 1/4 pound small carrots
  • 1 large onion quartered
  • 2 cups chicken stock
  • 1 cup vegetable stock
  • 1 bag Alexia Spicy Chipotle Sweet Potato Fries
  • 1 bag Alexia Sea Salt Sweet Potato Fries
  • 1 bag Alexia Onion rings
  • 1 tablespoon Mexican Chili Powder
  • 2 tablespoons Lawry's Seasoned salt
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 4 ounces cheese curds
  • 2 tablespoons butter
  • 2 tablespoons butter

Instructions

  1. Begin heating the oil on medium high heat in a dutch oven.
  2. Spice the beef on both sides with salt, pepper, Lawry's and chili powder.
  3. Add the beef and sear on all sides. Remove the beef and set aside.
  4. Add the vegetables and mix well to pick up the flavors from the pan.
  5. After 1 minute, add the beef to the top of the vegetables. Add the stock.
  6. Cook for 3 plus hours.

Fries and Onion rings

  1. Follow the box instructions - preheat oven to 425 degrees.
  2. Cook the fries for approximately 30 minutes and the onion rings for 16 - 18 minutes.

Gravy

  1. Remove the meat and vegetables from the dutch oven.
  2. Strain the liquid and reserve.
  3. Add the butter to the put on medium heat and melt.
  4. Once melted, add the flour and combine.
  5. Next, add the reserved liquid a cup at a time. Once absorbed, add another cup.

Assemble dish

  1. In a baking dish, fill with Alexia Smoky Chipotle Fries.
  2. Add the meat. Top with a handful of the cheese curds.
  3. Pour a ladle full of the gravy over the whole dish.
  4. Place in a 325 degree oven and cook for approximately 5 minutes until the cheese curds melt.
  5. Serve and enjoy!
