Instructions

Smoked Tofu

  1. Mix the sauce ingredients. Add the sliced tofu to the marinade. Let marinate for 15 - 30 minutes

Eggplant & Asparagus

  1. Take the sliced eggplant and add the salt. Let the moisture come out for 10 minutes. Place on a baking tray and cook in a 350 degree oven for 15 minutes.

Take asparagus and place on a baking tray. Sprinkle with olive oil and kosher salt.

Place in the oven for 12 - 15 minutes. Immediately remove and place in a bowl of ice water to shock the asparagus and stop the cooking.

  2. Assembling the Sandwich

  3. Begin by adding the sriracha aioli to the bottom piece of bread. Next, add the lettuce and the tomato. Now add the eggplant, followed by the smoked tofu and the asparagus. Drizzle more of the aioli over the asparagus. Top with the second piece of bread. Serve and enjoy!
