Meatloaf is underappreciated. My Smoked Chicken Meatloaf is moist and so flavorful thanks to My Dads BBQ Sauce.
Mix all the ingredients in a bowl. Once combined, form the chicken mixture into a loaf. Add to your smoker at 275 degrees. Cook for approximately an hour. In the last 10 minutes, turn up to 400 degrees to get a crust on the meatloaf. Also, brush some more of My Dad's BBQ Sauce over the top of the meatloaf.
Let rest for at least 5 minutes.
