Skillet Salmon

An easy weeknight meal spicing salmon with Old Bay Seasoning and using your cast iron skillet and oven for a perfect finish.

Ingredients

  • 4 - 6 ounce fillets
  • 2 tablespoons Old Bay Seasoning
  • 1 tablespoon Sunny Oaxaca - ancho coffee rub
  • 1 - 2 tablespoons grape seed oil
  • 1 - 28 ounce can diced tomatoes with garlic and basil and their juice
  • 4 ounces seafood stock

Instructions

  1. Pat dry the salmon fillets and liberally apply the seasoning.
  2. Heat the cast iron skillet on medium high heat.
  3. Add the oil and warm until hot.
  4. Add the salmon flesh side down and cook for two minutes.
  5. Turn over and top with the tomatoes and its juice.
  6. Add the seafood stock.
  7. Put in a 325 degree oven and cook for 10 - 11 minutes.
  8. Let rest for 1 - 2 minutes.
  9. Serve over the Riced Cauliflower.
