- 20 oz frozen chopped spinach thawed and squeezed dry
- 1/2 large white or yellow onion chopped
- 1 Tbsp canola or olive oil
- 4 large eggs
- 1/4 cup matzah meal
- 1 1/4 tsp kosher salt
- 1/4 tsp black pepper
- cooking spray
Heat the oven to 350°F.
Heat the oil in a medium sauté pan over medium heat. Add the onion and cook until soft, about 5 minutes. Set aside.
Drain the thawed spinach in a colander and squeeze out the liquid a few times, until it's as dry as possible. (I start this an hour ahead.)
In a large bowl, combine the spinach, onion, salt and pepper.
In a small bowl, beat the eggs well. Slowly add the spinach mixture to the eggs, whisking constantly so the eggs don't scramble.
Add the matzah meal and give it one final mix.
Spray a baking dish with cooking spray (I used a 6-inch round dish). Spread the mixture in and smooth the top.
Bake 30–35 minutes, until firm and the edges start to crisp. Let cool a few minutes before serving. Enjoy!
