Oreo Cookies

Recreating the classic cookie.

Ingredients

For the chocolate wafers

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 to 1 1/2 cups sugar
  • 1 1/4 sticks unsalted butter room-temperature
  • 1 large egg

For the filling

  • 1/4 cup 1/2 stick room-temperature, unsalted butter
  • 1/4 cup vegetable shortening
  • 2 cups sifted confectioners sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat to 375°F.
  2. Sift, and then, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar.
  3. In a stand mixer, take beaten eggs and the butter and mix until fluffy.
  4. Add the dry ingredients in batches and mixing. Repeat the process until dough comes together in a mass.
  5. Roll out the dough on the counter (as you would bread). Take a cookie cutter of choice and cut out the cookies and place on a baking tray covered with non-stick spray.
  6. The cookies will expand so make sure they are a few inches apart.
  7. Bake for 9 - 11 minutes. Set baking sheets on a rack to cool.
  8. To make the cream, place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla.
  9. Turn the mixer on medium high and beat for 2 to 3 minutes until filling is light and fluffy.
  10. To assemble the cookies, take a spoon of cream filling and place a good size dollop into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream.
  11. Lightly press on the top cookie to work the filling to the edges of the cookie.
  12. Continue this process until all the cookies have been sandwiched with the cream filling.
  13. Serve and enjoy with a glass of milk.
