Mexican Turkey Burger Quesadillas

Ingredients

  • 2 Lbs Ground Turkey
  • 1 Whole Green Pepper diced
  • 1 Whole Red Pepper diced
  • 1 Bunch Cilantro rough chop
  • 2 Tbsp Adobo Seasoning
  • 2 Tbsp Lemon Pepper
  • 2 Tsp Cumin
  • 1/4 Cup Coconut Milk
  • 12 Pieces Corn Flour Tortillas
  • 8 Ounces Quesadilla Cheese sliced
  • 2 Tbsp Corn Oil divided

Instructions

  1. Combine the first eight ingredients to make the burgers.  Form into 6 fairly flat patties.  Place on a baking sheet and bake in a 325 degree oven for 10 minutes.

    Meanwhile, heat a skillet on medium high heat.  Take on tortilla and top with a few slices of the quesadilla cheese.  Place in the skillet, top with the burger and then more cheese and the top tortilla.  Cook 2 - 3 minutes per side to get a good browning on the tortilla.  After flipping, if your cheese has not melted as much as you like, you should put a lid on the skillet.

    Finish by repeating with the remaining ingredients.

    Serve with a tomatillo sauce, pickled onions and a corn salsa.
