Mexican Couscous

Use Couscous as the base for melding traditional Mexican flavors

Ingredients

  • 1 cup Couscous
  • 1 1/2 cups water
  • 1 - 2 tbsp Cumin
  • 1 - 2 tsp Mexican Chili Powder
  • 2 tsp coriander
  • salt & pepper to taste
  • 1 -2 tbsp canola oil
  • 1/4 red onion diced
  • 1 - 15 oz can black beans rinsed
  • 1 can tomatoes with chilis
  • 2 - 3 sweet peppers sliced

Instructions

  • Bring the water to a boil and drop in the coucous.
  • Cook for 8 - 10 minutes, until tender. Set aside.
  • In a skillet, heat the oil on medium heat. Add the red onion and cook for 4 minutes to soften.
  • Add the peppers and spices and stir in well and cook for 2 minutes.
  • Add the tomatoes with chilis and cook until the liquid evaporates.
  • Add in the black beans and cook for 1 minute.
  • Salt & pepper to taste.
  • Add the couscous and mix together.
  • Serve and enjoy!
