Hominy Smoked Sausage Cheesy Casserole

Try a new food item - hominy. You will like it. This Hominy Smoked Sausage Cheesy Casserole is a great spin on a traditional mac n cheese.

Ingredients

  • 1 Lb Beef Smoked Sausage sliced
  • 30 Ounces Hominy
  • 1/2 Whole Red Onion
  • 3 Small Yellow Onions diced
  • 2 Cloves Garlic minced
  • 1 Tbsp Olive Oil
  • 1 Whole Red Pepper diced
  • 3/4 Cup Half & Half
  • 1 Cup Shredded Cheddar Jack Cheese

Instructions

  1. Preheat the oven to 375 degrees F. Spray a baking dish with cooking spray.  Set aside.

    In a skillet on medium high heat, cook the smoked sausage until you get a nice char on the sausages.  Set aside.

    In a Dutch oven, heat the oil on medium-high heat.  Add the onions and garlic and cook for 2 minutes.  Add the red pepper and cook for another 2 minutes. Stir in the hominy, half-and-half.  Bring to a boil, and reduce to a simmer.  Add in about three-quarters of the Cheddar Jack and sausage, reserving some of the cheese to add on the top.  (The 2nd version I separated the sausage out)  Mix well.  Taste and adjust the seasoning with salt and pepper.

    Pour the mixture into the prepared pan and top with the remaining cheese.  Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Serve and enjoy!
