Grilled Eggplant and Smoked Gouda Sandwich

A healthy vegetarian sandwich using some leftovers. The flavor is created from the grilling of the eggplant and sandwich with crunch from pickled red onions

Ingredients

  • 2 Slices Sourdough Bread
  • 3 Slices Eggplant grilled
  • 4 Slices Smoked Gouda
  • 1 Slice Red Onion
  • 1 Tsp Olive Oil

Pickling

  • 1/4 Cup White Wine Vinegar
  • 2 Tsp Sugar
  • 1 Tsp Salt

Instructions

  1. Begin by combining the pickling ingredients and then the red onions.  Pickle for 10 - 30 minutes.

    Next, brush the sliced eggplant with the olive oil.  Place on the grill on medium heat and cook 3 - 4 minutes per side.

    Assemble the sandwich and place on the outdoor grill.  Cook for 2 minutes per side.  

    Cut in half.  Serve and enjoy!
