Easy Cheesy Mashed Potatoes

Ingredients

  • 3 Lbs Yukon potatoes peeled and diced
  • 2/3 Cup Cheddar cheese shredded
  • 1/4 Cup Mozzarella cheese shredded
  • 3/4 Cup Milk
  • 8 Oz Sour cream
  • 2 Tsp Kosher salt
  • 1/2 Tsp Black pepper
  • 3 Tbsp Butter

Instructions

  1. Begin by adding the diced/quartered potatoes to a pot of water. Always, add your potatoes to cold water. Bring pot to a boil and cook the potatoes until fork tender. Once fork tender, drain the potatoes in a colander. Let cool a little - just enough to handle.

    Meanwhile, add the butter, milk, salt and pepper to a sauce pot. Heat on medium low heat until the butter is melted.

    Take the slightly cooled potatoes, and run them through a ricer. Pour the butter milk mixture over the riced potatoes and mix. Once combined, add in each of the cheeses and lightly mix. Transfer the mixture to a baking dish. Place the potatoes in a 400 degree oven and bake for 20 minutes. Finish by broiling for 2 - 3 minutes. You want the top to get some color.
