Are you looking for a new potato recipe for your Thanksgiving? If so, you need to try these Easy Cheesy Mashed Potatoes.
Begin by adding the diced/quartered potatoes to a pot of water. Always, add your potatoes to cold water. Bring pot to a boil and cook the potatoes until fork tender. Once fork tender, drain the potatoes in a colander. Let cool a little - just enough to handle.
Meanwhile, add the butter, milk, salt and pepper to a sauce pot. Heat on medium low heat until the butter is melted.
Take the slightly cooled potatoes, and run them through a ricer. Pour the butter milk mixture over the riced potatoes and mix. Once combined, add in each of the cheeses and lightly mix. Transfer the mixture to a baking dish. Place the potatoes in a 400 degree oven and bake for 20 minutes. Finish by broiling for 2 - 3 minutes. You want the top to get some color.
Serve and enjoy!
