Begin by slicing the chicken breasts horizontally. Then, with a mallet, pound the breasts to 1/4" thickness. Season the breasts with salt and pepper.
Set up your breading stations. First, put each breast in the flour. Shake off the excess. Then, move it to the egg wash. Cover completely and let the excess drip off. Now, add to the breadcrumbs. Cover well and press down to ensure the breadcrumbs fully adhere to the chicken.
Heat the oil in a skillet. Once at 325 - 350 degrees, add the breasts and cook 2 - 3 minutes per side. Remove from the pan and let drain on a rack. Complete the pan frying with all the breasts. To finish cooking, place in a 275-degree oven and cook for approximately 10 minutes. They are now ready to serve.
