Ingredients

Cherry BBQ Sauce

  • 1/2 Cup Ketchup
  • 3 Tbsp Apple Cider Vinegar
  • 1/4 Cup Pineapple juice
  • 2 Tbsp Rice wine syrup
  • 2 Tbsp Molasses
  • 1 Tbsp Worcestershire sauce
  • 1+ Pint Cherries cut in half

Tofu

  • 1 Package Tofu cut in horizontal slices

Instructions

Cherry BBQ Sauce

  1. Begin by adding the cherries to a pot. Cook on medium heat. Cook for about 10 minutes as they break down. Add the remaining ingredients and simmer for 20 minutes. Next, use an immersion blender to puree the sauce. Set aside.

Tofu and finishing dish

  1. Begin by pressing down the tofu wrapped in a towel with a heavy weight for 30 minutes. Take the drained tofu, and cut horizontally into 1/2" slices. Then, slice each piece with cross hatches. Bake the tofu for 30 - 40 minutes at 375 degrees.

Next, brush each piece of tofu with the BBQ sauce. Add to a cast iron skillet on medium high heat. Cook for 3 - 4 minutes constantly flipping and brushing with more sauce.

To serve, place the cherry BBQ glazed tofu on top of polenta. Enjoy!
