Brussels Sprouts Radicchio Agrodolce Vinaigrette

An attempt at a salad recreated from an anniversary dinner my wife and I enjoyed - Brussels Sprouts Radicchio Agrodulce Vinaigrette.

Ingredients

Salad

  • 1 Lb Brussels Sprouts
  • 2 Tsp Olive Oil
  • 2 Tsp Kosher Salt
  • 2 Heads Radicchio rough chop
  • 1/4 Whole Red Pepper sliced
  • 1/4 Whole Yellow Pepper sliced
  • 1/4 Whole Green Pepper sliced

Agrodolce Vinaigrette

  • 1/4 Cup Red Wine Vinegar
  • 2 Tbsp Sugar
  • 2 Tsp Salt
  • 2 Tsp Black Pepper

Instructions

Agrodolce Vinaigrette

  1. Mix all the ingredients and set aside.

Salad

  1. Cut the brussels sprouts in half.  Place on a baking tray and mix with olive oil and the salt.  Place in a 350 degree oven and cook until they get a nice char.  Let cool and mix with the radicchio and peppers.

    A few minutes before serving, put the dressing on and mix well.

    Serve and enjoy!
