Vegetable Ramen

I have to say that one of the most fun things about being a blogger is getting contacted by companies to try their product.  As a foodie, it is really fun to try new things.  In this case, I was contacted by Relished Foods.  Relished Foods delivers locally sourced and proportioned meals to your door.  Directions are provided and you assemble, cook the meal and end up with a gourmet meal.  This vegetable ramen is a great concept, especially for busy people.  I received 3 meals to try. With each meal, my wife said “I am so gourmet.”  I had to laugh.  The ideas they deliver are unique to please even the most refined, experienced chef.

Ingredients:

  • 8 oz Udon Noodles
  • 1 oz Radish sprouts
  • 3 oz Oyster mushrooms
  • 2 oz Pea Pods
  • 2 Green Onions
  • 3 Radishes
  • 2 oz Bamboo shoots
  • 2 tbsp vegetable base
  • 2 oz Cabbage mix
  • 1 oz Sambal
  • 1 tbsp vegetable oil
  • salt & pepper to taste

Directions:

Place the noodles in rapidly boiling water.  Cook for approximately 8 minutes until tender.  Rinse in cold water to stop the cooking process and set aside.

Prep the vegetables by cutting off the woody stems of the mushrooms; slice the green onions on the bias (that means at an angle); slice the radishes as thin as you can.

In a another pot, bring 1 & 1/4 cups of water to a boil.  Whisk in the vegetable base and simmer for 5 minutes.  This quantity serves at least 2 people.  Put the noodles on the bottom of a bowl and top with half the vegetables.  Pour half the broth over the noodles and vegetables and let cook for 5 minutes.  Stir in the sambal – do not be too aggressive – this is spicy!
