Day One of eating less meat.  As you know, the kids have gone off to college.  When it comes to eating, this is an opportunity.  An opportunity for me to reevaluate what I eat and move to a healthier diet.  For me, for now, it means I want to eat more vegetarian meals.  I do not intend to abstain from meat, just to reduce how often I eat meat.  I plan to eat more fish and a lot more fruit and vegetables.  This recipe is a start and a simple start on my new path.  Sorry boys.  When you come home, you will subjected to, or should I say, a beneficiary of a healthier lifestyle.

Adding more meatless meals is part of the new agenda. Now that I cook so much more and there are so many great blogging friends out there, finding ideas to execute will not be that hard. Feel free to respond with a link to one of your favorite meatless meals you have prepared for my readers to find.
