As I begin to write this post, I am sitting at the Denver airport getting ready to fly back to Chicago.  It has been a full week.  I was in Denver for Colliers International’s Americas conference.  This conference brought together more than 3000 commercial real estate professionals to learn, network and collaborate. The experience always exceeds my expectation.  It is funny.  Our minds tell us that these company meetings are too long, too expensive and there is always something I need to be doing at home.  By the end, I am always surprised, I don’t know why at how much I feel I took away from experience.  Note to self, look for the best in everything!

So the majority of this week was spent in the mountains.  Denver is such an amazing place.  The backdrop is so spectacular.  You can’t help but feel you are in “God’s Country” as they say.  This place truly touches my soul.  On the physical level, the altitude definitely affects your body.  A few days here is was not enough time for my body to adjust.  I felt dehydrated almost immediately and I was tired earlier in the day.  It really makes sense why the US Olympic team trains at altitude.

I also understand why this area is known for a healthy lifestyle and alternative living.  The air and water are so pure, so clean.  When you walk around, you can’t help but relax.  Maybe that is a consequence of the thin air or maybe it is something deeper than that.  One more thought is you really do get sense of the West here.  It is a feeling, the architecture, the way the people dress.

On our last night, there was a function for all the retail professionals in the company at a place called the Denver Beer Co.  All they serve is beer.  There is not even food.  So what do they do?  They have spots outside that food trucks pull into and serve the patrons.  What a fun idea.  Below is the first truck – Crock Spot – we sampled.  Everyone was so nice and the food was really good.

The second food truck at the Denver Beer Co. was called Basic Kneads Pizza.  What do they do?  They serve pizza from a wood burning oven on the truck.  Just look at the picture below of the oven and the resulting pizza.
