Potatoes with Onions and Peppers

Taken advantage of what I have in the refridgerator can lead to a very tasty result.  This was a simple compilation of flavors I like. 

Recipe
Potatoes with Onions and Peppers:

  1. Dice onions and cut sweet peppers into 1 inch strips, saute in 1 tbsp olive oil for 2 – 3 minutes
  2. Once vegetables are softened, add 2 tsp smoked paprika, 1/2 tsp each of salt and pepper
  3. Cube baked potato, add to pan, and cook for 10 – 15 minutes until desired crispness is attained
  4. Salt and pepper to taste
