Pimento Grilled Cheese

The theme for this weekend’s belated holiday party was Mardi Gras.  For me this is another excuse to make a gumbo and a creole.  The story though, is about the appetizers.  I was gifted a marvelous recipe book called Deep South Parties by Robert St. John.  I have used this “cocktail” recipes for occasions other than a Southern theme but their authenticity is undeniable.

This post shares a Grilled Pimento Cheese recipe.  What makes this grilled cheese so unique is the flavors brought together with the cheese mixture and the roasted red peppers.  The miniature sandwiches also make for a good look and a fun party nibble.

Recipe
Miniature Pimento Grilled Cheese Sandwiches:

  • 3/4 of a loaf of white bread, crusts removed
  • 12 oz sharp cheddar cheese
  • 3/4 cup of Parmesan and Parmesan blend including Asiago
  • 1/2 cup roasted red peppers, diced
  • 1/2 cup of mayonnaise
  • 1 – 2 tsp Creole seasoning
  • 1 – 2 tsp hot sauce
  • 1 tsp Worcetershire sauce
  • 1 tsp garlic powder
  • 2 tsp dehydrated onion
Directions:
In your mixer using the paddle attachment, combine all ingredients except the white bread and blend well.  Refrigerate for a few hours.  Spread the cheese over the white bread pieces and cook on a 325 degree hotplate browning the bread.  Cover and refrigerate once again.  Cut the sandwiches on a diagonal and 20 minutes before serving, put in a 225 degree oven and re-warm the sandwiches.  Enjoy!

    You are sweet and funny and you know my wife is in good shape. 90% of the time I make my own rubs. Really easy to do. The Milwaukee rub was a spice I bought at a cool shop in Evanston and wanted to finish it off.
