A salad is a very necessary part of an Italian dinner.  Most of this dinner I made choices to limit the fat.  This dressing was no exception.  I love a creamy dressing.  Who doesn’t?  But at home for sure, I try to make healthier choices.  I do cheat some when I go out but when I can control what goes in to the recipe, I have no excuse not to make better choices.

This recipe is the best recipe I have made yet using Fat free Greek yogurt.  So definitely try this one.

Directions:

  • 6 Tablespoon Fat free Greek yogurt
  • 1 Cup Olive oil
  • 1 Teaspoon Oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon dried chives
  • 1 Teaspoon Garlic powder
  • 6 Tablespoon Red wine vinagar
  • 2 Tablespoon Grated Parmasean cheese
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black pepper

Preparation Directions:

  1. Put all ingredients in a jar and shake until creamy and well mixed

Curious if you know the nutritional values for this dressing. How much is one serving? It seems like it would be high in calories due to the whole cup of olive oil. Have you ever tried less, or none?

Laura, I am sorry but I do not. I often use Greek yogurt in recipes and dressings. You can lighten up on the oil for sure. You might also try a little almond, soy or coconut milk as a substitute for some of the oil. Hope that helps.
