Ho Ho Cake

Are there fonder memories of childhood pleasures than the Ho Ho.  Yes, I know the Ding Dong too.  As I think more about the preceding statement, it causes me to reflect on favorite childhood memories we can all relate to.  The first snow and sledding.  Jumping in the pool on a warm summer day.  Playing kick the can out front with whatever neighbors were outside.  Playing 4 square.  Playing Home Run Derby.  Playing outside until the sun went down or we were called in for dinner.

 
I am a child of the 70’s. Which makes me think of the TV shows I watched.  The Dick Van Dyke show; Mork and Mindy, The Brady Bunch; Happy Days’ Laverne & Shirley and Bewitched to name a few.
 
So I saw a recipe for the Ho Ho and I adapted it into a cake for

Recipe
Ho Ho Cake(Adapted from Leenes Sweet Delights):
Ingredients:

  • Chocolate Devil’s Food cake mix and Yellow cake mix

Filling

  • 1/2 cup butter
  • 1/2 cup vegetable shortening
  • 4 cups confectioners sugar 
  • 2 – 3 tbsp skim milk

Chocolate Glaze

  • 1/2 cup butter
  • 1/2 cup cocoa powder
  • 2 cups confectioners sugar
  • 2 – 4 tbsp skim milk

Directions:

Follow the directions for the cake mix but make in cake tins.  For the filling, in a sauce pan, softened the butter and cream in a mixing bowl with the shortening.  Gradually add the sugar and the skim milk until fully mixed in.  Spread this filling over the first 2 layers of cake.  I used the chocolate cakes on the bottom and then topped with one of the yellow cakes.  I put the cake in the fridge to chill prior to spreading the filling on each layer.
 
For the chocolate glaze, melt the butter over medium heat and when melted, add in the cocoa.  Stir until smooth.  Remove from heat and add in the sugar and milk and stir until mixed and thick.  Poor over the top layer of the cake.  Spread to the edges and let begin to drop down the sites.  Put in fridge to set and take out when ready to eat.  Enjoy!
