Grilled Cheese & Tomato Sandwich

Is there anything more comforting than a grilled cheese sandwich?  I don’t think so.  A friend dropped off a lot of vegetables that he picked from his garden.  I had a ton of tomatoes that I needed to use before they would go bad.  Lunch arrived.  How about adding tomatoes to my grilled cheese.  So many people have ketchup with their grilled cheese sandwiches.  What is the base of ketchup?  That’s right – tomatoes.  So we know it will go together well.

Ingredients:

  • 2 pieces of wheat bread
  • 1/4 – 1/2 cup each shredded cheddar and mozzarella cheese
  • 3 slices of beefsteak tomato
  • 1 tbsp butter
  • 1 tbsp canola oil

Directions:

Heat a skillet on medium heat.  Put in 1 tbsp each butter and oil (you could use a little less of each if you prefer).  While the pan is heating up, put the cheese on each half of the bread.  Layer the cheddar, then the mozzarella and then the cheddar.   When the butter has melted, put the bread in and cover the pan.  It will take about 3 minutes for the cheese to melt and the bread to brown.  Remove the bread from the pan and add the tomatoes.

Put the sandwich together and enjoy!

    I absolutely LOVE putting a thick slice of tomato on my grilled cheese, soooo good.

      A friend had dropped off the tomatoes and I had to find a good use for them. I wish you had told me that this was a good combination. I have seen it before but not sure I have made this before. This is a definite repeat.

    This is a favorite of mine as well though I like your presentation better. LOL. I play around with different cheeses like Gouda, and yes, American (Not pasturized process junk…) and add carmelized onions. and thick cut bacon…I love what you do with simple food Peter!!!

      I like the idea of playing with different ingredients to add in. Everyone loves bacon. I love gouda too. Love to use smoked gouda.
